Sometimes it may seem that all vegans eat is hummus. We do love hummus because it is, among other things, so convenient. This pea spread is even easier to make as you don't have to simmer the chickpeas for hours. It is also lighter, so it is perfect as a summer snack. You can also create many different variations by adding different herbs. I like adding mint or flat-leaf parsley but thyme would also be delicious!
2 cups of cooked peas (I boil them for five minutes)
3/4 cup of extra virgin olive oil
5 tablespoon of nutritional yeast
1 teaspoon of salt (or smoked salt)
4 tablespoons of lemon juice
Put all the ingredients in a food processor and blend until smooth.
